“About then (1881), Solomon Arager, a rabbi and shochet by profession, was brought to Denver from San Francisco by the Orthodox Jews. How the early Jews managed to eat kosher food before the coming of Rabbi Arager is a mystery. With the coming of Rabbi Arager, it was possible to observe the Jewish laws, for he acted as a shochet and mohel as well.”
